  • 1 lb Lean Ground Pork Aim for 90-95% lean
  • 1 cup Breadcrumbs Substitute with gluten-free breadcrumbs if needed
  • 1 large Egg Acts as a binder
  • 1 tsp Garlic Powder Fresh garlic can be substituted
  • 1 tsp Onion Powder
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper Adjust to taste
For the Sauce
  • 1 cup Cranberry Sauce Both jellied and whole cranberry sauces work well
  • 2 tbsp Soy Sauce Tamari can be used as a gluten-free alternative
  • 1 tbsp Cornstarch Flour can be an alternative
For Garnish (optional)
  • 2 tbsp Fresh Parsley Adds color and freshness

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the lean ground pork, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. With wet hands, form medium-sized meatballs, about the size of a golf ball, aiming for approximately 32 meatballs.
  4. Place the meatballs on the prepared baking sheet and bake for 20-25 minutes, until golden brown and cooked through.
  5. In a skillet over medium heat, combine cranberry sauce, soy sauce, and cornstarch. Bring to a gentle boil and thicken.
  6. Gently toss the baked meatballs in the hot cranberry sauce and let them heat for an additional 5 minutes.
  7. Transfer the meatballs to a serving platter and garnish with freshly chopped parsley, then serve warm.
