Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish with olive oil.
  2. In a small bowl, whisk together the light brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth.
  3. Pat the salmon fillets dry and rub them with olive oil, seasoning generously with salt and black pepper.
  4. Place the salmon fillets skin-side down in the baking dish and spoon two-thirds of the glaze over them. Scatter diced pineapple around the fillets.
  5. Bake the salmon for 12 to 15 minutes until opaque and flaking easily with a fork.
  6. For extra caramelization, broil the salmon for 1-2 minutes, monitoring closely to avoid burning.
  7. Let the salmon rest for about 5 minutes before serving. Garnish with fresh parsley and drizzle any remaining pan juices over the fillets.
