Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef or ground turkey for a lighter option
  • 1 cup Breadcrumbs use gluten-free breadcrumbs or almond flour
  • 1 Egg beaten
  • 1/4 cup Milk
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Garlic Powder
  • to taste Salt
  • to taste Pepper
For the Veggie Filling
  • 1 Green Bell Pepper diced
  • 1 Onion diced
  • 1 tbsp Olive Oil for sautéing
For the Cheesy Topping
  • 4 slices Provolone Cheese for layering
  • 1 tbsp Fresh Parsley optional, for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a skillet, heat olive oil over medium heat and sauté the diced green bell pepper and onion for about 5 minutes until tender.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Mix until combined.
  4. Press half of the meat mixture into the bottom of the prepared loaf pan. Layer with provolone cheese slices, sautéed vegetables, then top with remaining meat mixture.
  5. Bake in the preheated oven for 45-50 minutes, until the internal temperature reaches 160°F (70°C). Add more provolone on top in the last 5 minutes of baking.
  6. Let the meatloaf rest for 5-10 minutes before slicing to allow the juices to redistribute.
  7. Slice the meatloaf and garnish with fresh parsley if desired. Serve with your choice of sides.
