Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and grease a baking sheet with olive oil.
  2. Season the chicken breasts with salt, pepper, and any optional herbs.
  3. Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Let it rest before slicing.
  4. Place the flatbreads on the greased baking sheet and spread basil pesto over each one.
  5. Arrange the sliced chicken evenly atop the pesto flatbreads.
  6. Top with mozzarella cheese, halved cherry tomatoes, and a sprinkle of Parmesan cheese.
  7. Bake in the preheated oven for 10-12 minutes until the cheese is melted and the edges are golden brown.
  8. Remove from the oven, let cool slightly, slice, and garnish with fresh basil leaves before serving.
