- Season chicken breasts with salt and pepper on both sides. Allow to rest.
- In a shallow dish, combine grated Parmesan cheese and panko breadcrumbs.
- Coat chicken breasts in the Parmesan and panko mixture.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken breasts for 3-4 minutes per side until golden brown.
- Add minced garlic to skillet and sauté for 1 minute.
- Pour in cream and sprinkle in Italian seasoning. Simmer for 2-3 minutes.
- If using, add spinach to the skillet and stir until wilted.
- Stir in more grated Parmesan to thicken sauce, cover and simmer for 8-10 minutes.
- Plate the chicken and ladle creamy garlic sauce over it before serving.
