- Heat a tablespoon of olive oil in a large pot over medium-high heat. Add the diced chicken breast, generously seasoning with salt and pepper. Cook for about 5-7 minutes until golden brown and cooked through, then remove and set aside.
- In the same pot, add more olive oil if needed, then toss in minced garlic. Sauté for about 30 seconds until fragrant, then add BBQ sauce.
- Pour in BBQ sauce, honey, and chicken broth, stirring to combine. Allow to simmer gently for about 2-3 minutes.
- Add rotini pasta to the pot, ensuring it's submerged in the sauce. Bring to a boil, then reduce to a simmer. Cook for 12-15 minutes, stirring occasionally.
- Once pasta is cooked and liquid is mostly absorbed, reintroduce the sautéed chicken back into the pot and stir to coat evenly in the sauce.
- Remove from heat and garnish with chopped parsley. Serve hot and enjoy!
