Step-by-Step Instructions
  1. In a large oven-safe skillet, heat 2 tablespoons of oil over medium heat until shimmering. Add the diced yellow onion and sauté for 3-5 minutes until soft and translucent. Stir in minced garlic and optional red pepper flakes, cooking for an additional 1-2 minutes, until fragrant.
  2. Add sliced chicken breasts to the skillet, season generously with salt and pepper, and sauté for 6-8 minutes until the chicken is cooked through and no longer pink inside.
  3. Stir in 1 cup of rinsed white rice and 2 ½ cups of chicken bone broth. Raise the heat to bring the mixture to a gentle boil, then reduce to low, cover, and simmer for 15 minutes.
  4. Carefully stir in the broccoli florets, Parmesan cheese, and half of the three-cheese blend. Cover the skillet and let it cook for an additional 5-7 minutes on low heat.
  5. Preheat your broiler while checking that the casserole is mixed evenly. Sprinkle the remaining cheese blend evenly on top. Broil for about 5 minutes until the cheese is golden and bubbly.
