Step-by-Step Instructions for One-Pot Chicken and Rice
- In a large pot over medium heat, add a splash of oil and sauté one diced onion for about 3-4 minutes until it becomes translucent. Stir in 2-3 minced garlic cloves and cook for an additional 1 minute until fragrant.
- Add 1 to 1.5 pounds of chicken thighs or breasts, seasoning with salt, pepper, and paprika. Cook for about 5-7 minutes, flipping occasionally until browned on all sides.
- Stir in 1 cup of long-grain rice, mixing well with the chicken and aromatics. Pour in 2 cups of chicken broth and bring to a gentle boil. Reduce the heat to low, cover, and let it simmer for about 18-20 minutes.
- After the rice has absorbed most of the liquid, add in your choice of vegetables, such as 1 cup of frozen peas and diced carrots. Cover and cook for an additional 5 minutes.
- Remove the pot from heat and let it sit covered for about 5 minutes. Fluff the One-Pot Chicken and Rice with a fork before serving, garnishing with chopped parsley and lemon wedges.
