- Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
- Pat chicken thighs dry and season with smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Heat olive oil in a skillet and sear chicken thighs for 3-4 minutes on each side until golden brown. Remove chicken and set aside.
- In the same skillet, add more olive oil and unsalted butter. Sauté minced garlic for 1 minute until fragrant.
- Add halved baby potatoes along with herbs and seasonings. Toss to coat the potatoes well.
- Deglaze with chicken broth, scraping up any browned bits. Nestle chicken on top of potatoes.
- Bake for 25-30 minutes until chicken is 165°F (74°C) and potatoes are fork-tender.
- Drizzle lemon juice over the dish and garnish with parsley before serving.
