- Line an 8 or 9-inch square pan with parchment paper.
- Blend chopped strawberries with applesauce until smooth, about 30-60 seconds.
- Transfer puree to a heat-proof bowl, sprinkle gelatin, whisk gently, and let it bloom for 5 minutes.
- Heat the gelatin mixture in a double boiler, stirring until dissolved (3-5 minutes), then remove from heat and cool.
- Beat the cooled gelatin mixture in a stand mixer on high for about 15 minutes until it quadruples in volume.
- Pour the mixture into the prepared pan and spread evenly.
- Chill for at least 1 hour to set.
- Lift the cake out using parchment, slice and serve. Optionally top with whipped cream.
