  3. Transfer puree to a heat-proof bowl, sprinkle gelatin, whisk gently, and let it bloom for 5 minutes.
  4. Heat the gelatin mixture in a double boiler, stirring until dissolved (3-5 minutes), then remove from heat and cool.
  5. Beat the cooled gelatin mixture in a stand mixer on high for about 15 minutes until it quadruples in volume.
  6. Pour the mixture into the prepared pan and spread evenly.
  7. Chill for at least 1 hour to set.
  8. Lift the cake out using parchment, slice and serve. Optionally top with whipped cream.
