  • 4 cloves garlic minced

  • 1 can coconut milk full-fat recommended

  • 2 teaspoons fresh thyme or dried thyme at half the amount

Step-by-Step Instructions
  1. Heat a large pot over medium heat and add chopped onion and minced garlic. Sauté for about 5 minutes until softened.
  2. Add cubed purple sweet potatoes and stir to coat with onion and garlic. Sauté for another 5 minutes.
  3. Pour in vegetable broth and bring to a gentle boil. Stir and let boil for a minute.
  4. Add shredded red cabbage, stir well, and reduce heat to a simmer. Cook for 15 minutes.
  5. Stir in coconut milk along with fresh thyme, salt, and pepper. Warm through for about 5 minutes.
  6. Taste the soup and adjust seasoning with more salt and pepper as needed.
  7. Ladle the soup into bowls and garnish with black sesame seeds before serving.
