For the Sandwich
  • 4 slices Ciabattas
  • 2 pieces Premium Steaks Ribeye or sirloin recommended
  • 100 g Fresh Rocket Arugula can be used as a substitute
For the Caramelized Onions
  • 2 medium Brown Onions Chopped
  • 2 tbsp Brown Sugar
  • 2 tbsp Balsamic Vinegar
  • 1 pinch Sea Salt
  • 1 pinch Cracked Black Pepper
For the Roasted Garlic and Chive Aioli
  • 75 ml Olive Oil Extra virgin recommended
  • 1 whole Whole Garlic Bulb Halved
  • 1 to taste Sea Salt
  • 0.5 tsp Dijon Mustard
  • 1 bunch Fresh Chives Green onions can be used as a substitute
  • 0.5 medium Lemon Juice
  • 1 yolk Egg Yolk

Method
 

Preparation Steps
  1. Allow the premium steaks to reach room temperature, season generously with sea salt and cracked black pepper.
  2. Halve the whole garlic bulb, drizzle with olive oil and wrap in foil.
  3. Preheat your BBQ grill to medium-high heat and prepare the ciabattas by slicing and drizzling cut sides with olive oil.
  4. Grill the seasoned steaks for 3-4 minutes for medium-rare, or 5-6 minutes for well-done.
  5. Heat a skillet with butter and sauté the chopped onions for 3-5 minutes until softened.
  6. Add brown sugar and balsamic vinegar to the onions, simmer until glazed, about 1-2 minutes.
  7. In a food processor, blend egg yolk and Dijon mustard, gradually add olive oil to emulsify.
  8. Remove the grilled steak, let it rest for about 5 minutes.
  9. Spread aioli on ciabatta, layer with steak, caramelized onions, and fresh rocket, then close the sandwich.
