Step-by-Step Instructions for Hawaiian Huli Huli Chicken
  1. In a medium-sized bowl, whisk together soy sauce, brown sugar, pineapple juice, ketchup, vegetable oil, minced ginger, minced garlic, rice vinegar, and black pepper until smooth.
  2. Place chicken thighs into a resealable bag or shallow dish. Pour the marinade over, ensuring even coating. Refrigerate for at least 1 hour, ideally overnight.
  3. Preheat your grill to medium-high heat, aiming for about 400°F. Clean and lightly oil the grates.
  4. Remove marinated chicken from the refrigerator and let it sit at room temperature for about 10 minutes before grilling.
  5. Place the chicken thighs on the preheated grill, skin-side down. Grill for approximately 6-8 minutes until grill marks form, then flip and cook another 6-8 minutes until internal temperature reaches 165°F.
  6. During the last few minutes, optionally baste the chicken with reserved marinade to enhance flavor.
