Step‑by‑Step Instructions
  1. Begin by cutting the beef chuck roast into bite-sized cubes and patting them dry. Season with salt and black pepper.
  2. Heat 2 tablespoons of vegetable oil in a large Dutch oven over medium-high heat. Sear the beef cubes on all sides until browned, about 3-4 minutes per batch.
  3. Lower the heat and add more oil if needed. Sauté the chopped onion for 5-7 minutes until translucent. Add minced garlic and grated ginger; cook for 1-2 more minutes.
  4. Return beef to the pot and add soy sauce, beef broth, brown sugar, and rice vinegar. Stir together and simmer with optional red pepper flakes.
