For the Eggplant
  • 1 large Eggplant cut into 1-inch cubes
  • 2 tablespoons Olive Oil for roasting
  • to taste Salt
  • to taste Pepper
For the Miso Glaze
  • 1/4 cup White Miso Paste or red miso, use less
  • 2 tablespoons Mirin or 1 tbsp rice vinegar + 1 tsp sugar
  • 1 tablespoon Soy Sauce gluten-free if necessary
  • 1 tablespoon Honey or maple syrup / agave nectar
  • 1 teaspoon Fresh Ginger finely grated
  • 1 clove Garlic minced
Optional Garnishes
  • to taste Sesame Seeds for garnish
  • to taste Green Onions chopped for garnish

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Cut the eggplant into 1-inch cubes and toss with olive oil, salt, and pepper.
  3. Spread the eggplant cubes evenly on the baking sheet and roast for 20–25 minutes, flipping halfway through.
  4. Whisk together miso paste, mirin, soy sauce, honey, ginger, and garlic to make the glaze.
  5. Brush the roasted eggplant with the miso glaze and return to the oven for an additional 5–7 minutes.
  6. Remove from the oven and garnish with sesame seeds and green onions before serving.
