Preparation Steps
- Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Cut the eggplant into 1-inch cubes and toss with olive oil, salt, and pepper.
- Spread the eggplant cubes evenly on the baking sheet and roast for 20–25 minutes, flipping halfway through.
- Whisk together miso paste, mirin, soy sauce, honey, ginger, and garlic to make the glaze.
- Brush the roasted eggplant with the miso glaze and return to the oven for an additional 5–7 minutes.
- Remove from the oven and garnish with sesame seeds and green onions before serving.
