Step‑by‑Step Instructions for Miso Glazed Eggplant
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cube the eggplant into even pieces, then toss with olive oil, salt, and pepper.
  3. Roast the eggplant for 20-25 minutes, tossing halfway through.
  4. Prepare the miso glaze by whisking together miso paste, mirin, soy sauce, honey, ginger, and garlic in a bowl until smooth.
