Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease mini muffin tins.
  2. Blend tapioca flour, whole milk, eggs, vegetable oil, sharp cheddar, mozzarella, salt, and garlic powder until smooth.
  3. Fill muffin cups about ¾ full with the batter and ensure they are ready for baking.
  4. Bake in the oven for 19-20 minutes until golden brown and puffed up.
  5. If making multiple batches, quickly blend the batter again as needed before refilling muffin tins.
  6. Allow to cool in muffin tins for a few minutes, then transfer to a wire rack and serve warm.
