  1. Begin by patting your chicken breast dry with paper towels to ensure a nice sear. Slice the chicken into thin strips and season generously with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the seasoned chicken in a single layer and sear without stirring for 2 minutes, then stir and cook for 5-7 minutes until browned and cooked through.
  3. Push the chicken to one side of the skillet, add minced garlic to the other side, and sauté for 30 seconds until fragrant. Then add sliced bell peppers and zucchini. Stir-fry for 5-7 minutes.
  4. Add halved cherry tomatoes, stir everything together, and cook for an additional 2-3 minutes until tomatoes soften but do not break down.
  5. Sprinkle in dried oregano and basil, and season with additional salt and pepper as needed. Toss everything in the skillet for another minute to combine flavors.
