- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add finely diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional 30 seconds, then remove from heat and let cool slightly.
- In a large mixing bowl, combine sautéed onion and garlic with chopped baby spinach, ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
- Shape the mixture into 8 equal patties, each about ½ inch thick, and set them aside.
- Wipe the skillet clean, heat the remaining olive oil over medium heat, and cook patties for 5-6 minutes on each side until golden brown and cooked through.
