Method
 

Step-by-Step Instructions
  1. Whisk the eggs by cracking them into a mixing bowl, adding chopped parsley or oregano, salt, and pepper. Stir well for about 2 minutes until frothy.
  2. Heat a non-stick skillet over medium heat. Add olive oil or butter, then pour in the egg mixture, cooking for 3-4 minutes until set.
  3. Toast slices of bread in a separate skillet or toaster until golden brown and crispy, about 3-4 minutes.
  4. Prepare fresh fillings by slicing tomatoes and cucumbers. Crumble the feta cheese for the sandwich.
  5. Assemble the sandwich by layering toasted bread, tomatoes, cucumbers, the omelet, and feta cheese.
  6. Finish by capping with the second slice of bread, pressing down gently. Slice in half and serve warm.
