  • 1.5 tablespoons Maple Syrup Can be omitted or replaced with honey or agave
  • 0.5 teaspoon Vanilla Extract Use pure vanilla for best results
  • 65 grams Chia Seeds Use black or white chia seeds interchangeably
For the Fruit Layer
  • 1 whole Pink Dragon Fruit Substitute with powdered dragon fruit if fresh is unavailable
  • 1 whole Alphonso Mango Substitute with seasonal mango varieties or thawed frozen mango
For the Topping
  • 1 cup Vanilla Coconut Yogurt Opt for any yogurt alternative for vegan versions

Method
 

Step-by-Step Instructions
  1. In a measuring jug, combine coconut milk, maple syrup, and vanilla extract. Whisk together until fully blended.
  2. Add chia seeds to the coconut milk mixture, stir thoroughly, and set aside for at least 4 hours or overnight in the refrigerator.
  3. Peel and roughly chop half of the pink dragon fruit. Blend until smooth and stir into the chia pudding.
  4. Peel and chop the Alphonso mango, blend until smooth to create a mango coulis.
  5. In individual jars, start layering with chia pudding, followed by mango coulis, and vanilla coconut yogurt. Repeat the process until jars are filled.
  6. Top each parfait with additional chopped mango, and optionally sprinkle some chia seeds or coconut flakes.
