- In a measuring jug, combine coconut milk, maple syrup, and vanilla extract. Whisk together until fully blended.
- Add chia seeds to the coconut milk mixture, stir thoroughly, and set aside for at least 4 hours or overnight in the refrigerator.
- Peel and roughly chop half of the pink dragon fruit. Blend until smooth and stir into the chia pudding.
- Peel and chop the Alphonso mango, blend until smooth to create a mango coulis.
- In individual jars, start layering with chia pudding, followed by mango coulis, and vanilla coconut yogurt. Repeat the process until jars are filled.
- Top each parfait with additional chopped mango, and optionally sprinkle some chia seeds or coconut flakes.
