Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or cooking spray.
  2. Dice russet potatoes into ½-inch cubes. Boil in salted water for 10-12 minutes until fork-tender. Drain and cool slightly.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Slice kielbasa and sauté for 5-7 minutes until browned.
  4. Add chopped onion to the skillet and cook for 3-4 minutes until translucent.
  5. Sprinkle in garlic powder, onion powder, paprika, black pepper, and salt. Cook for another 1-2 minutes.
  6. In a mixing bowl, combine potatoes, kielbasa, and onions. Add melted butter, sour cream, milk, and 1 ½ cups of cheese. Stir gently.
  7. Spread the mixture in the greased baking dish. Top with remaining cheese.
  8. Bake for 20-25 minutes until cheese is melted and golden brown.
  9. Let cool for 5 minutes before serving. Garnish with parsley.
