- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine 6 cups of peeled and sliced peaches with 1 cup of sugar, ¼ cup of water, and 1 tablespoon of fresh lemon juice. Toss gently until well-coated. Let sit for about 15 minutes.
- Melt ½ cup of unsalted butter. In a separate bowl, whisk together 1 cup of all-purpose flour, 1 cup of sugar, 1 tablespoon of baking powder, and a pinch of salt. Gradually mix in the melted butter, 1 cup of whole milk, 2 teaspoons of pure vanilla extract, and a sprinkle of ground cinnamon until just combined.
- Lightly grease a 9x13-inch baking dish and pour the batter into the bottom. Spoon the peach mixture over the batter without stirring.
- Bake in the preheated oven for 45 to 50 minutes or until golden brown and bubbly around the edges.
- Remove from oven and let cool for 10 to 15 minutes before serving.
