- Preheat the oven to 350°F (175°C) and prepare a standard loaf pan.
- In a large bowl, whisk together gluten-free flour, baking powder, baking soda, and salt.
- In another bowl, mix eggs, melted coconut oil, coconut sugar, dairy-free milk, and vanilla extract.
- Combine wet and dry ingredients gently until just mixed, the batter should be thick.
- Pour half of the batter into the loaf pan and dot half of the jam across it, swirl gently.
- Add the remaining batter and top with the rest of the jam, swirl again.
- Bake for 45-55 minutes, checking for doneness with a toothpick.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
