Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a standard loaf pan.
  2. In a large bowl, whisk together gluten-free flour, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, melted coconut oil, coconut sugar, dairy-free milk, and vanilla extract.
  4. Combine wet and dry ingredients gently until just mixed, the batter should be thick.
  5. Pour half of the batter into the loaf pan and dot half of the jam across it, swirl gently.
  6. Add the remaining batter and top with the rest of the jam, swirl again.
  7. Bake for 45-55 minutes, checking for doneness with a toothpick.
  8. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
