Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Mash the ripe bananas in a mixing bowl until mostly smooth with some chunks for texture.
  3. Add sugar, eggs, vegetable oil, and vanilla extract to the mashed bananas and whisk until creamy.
  4. In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt. Fold into the wet ingredients.
  5. Pour the batter into the greased loaf pan and sprinkle with optional add-ins if desired.
  6. Bake for 50-60 minutes, checking for doneness with a toothpick.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
