Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by lining it with parchment paper.
- In a large mixing bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon kosher salt, 1 tablespoon of ground ginger, 1 teaspoon of ground cinnamon, ½ teaspoon of ground nutmeg, and ¼ teaspoon of ground cloves.
- In another bowl, beat together ½ cup of room temperature unsalted butter and 1 cup of packed light brown sugar until creamy and light.
- Add ½ cup of unsulfured molasses and 1 teaspoon of pure vanilla extract to the butter-sugar mixture, then beat in 1 large egg.
- Gradually add the sifted dry ingredients to the wet mixture, alternating with ¾ cup of buttermilk, and mix until just combined.
- Pour the batter into the prepared loaf pan and bake for 50–55 minutes, or until a toothpick comes out clean. Let cool for 20 minutes.
- While the loaf cools, melt ½ cup of unsalted butter in a saucepan, swirling until golden brown, then let cool and beat with 8 ounces of room temperature cream cheese.
- Gradually add 2 cups of powdered sugar, 1 teaspoon of vanilla, and milk to achieve desired frosting consistency.
- Once the loaf is cool, remove from the pan, frost with cream cheese frosting, slice, and serve.
