Step-by-Step Instructions for Flaky Spanakopita Spiral
- Preheat your oven to 375°F (190°C). Gather your ingredients and prepare your workspace.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté for 3–5 minutes until translucent.
- Add fresh or thawed spinach to the skillet. Cook for 4–6 minutes, stirring until wilted. Season with salt, pepper, and lemon juice.
- Transfer the spinach mixture to a mixing bowl. Fold in goat cheese, feta, cheddar, egg, parsley, nutmeg, and pine nuts. Mix well.
- Brush a large baking dish with olive oil. Lay two sheets of phyllo dough flat, brushing each layer with olive oil.
- Spread the spinach filling along one edge of the phyllo, leaving a 2-inch border. Roll the phyllo into a tight tube and spiral it into the dish.
- Continue layering and coiling with remaining phyllo and filling, brushing each layer with olive oil.
- Brush the top of the assembled spiral with olive oil and bake in the preheated oven for 25–30 minutes until golden brown.
