Step-by-Step Instructions for Flaky Spanakopita Spiral
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and prepare your workspace.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté for 3–5 minutes until translucent.
  3. Add fresh or thawed spinach to the skillet. Cook for 4–6 minutes, stirring until wilted. Season with salt, pepper, and lemon juice.
  4. Transfer the spinach mixture to a mixing bowl. Fold in goat cheese, feta, cheddar, egg, parsley, nutmeg, and pine nuts. Mix well.
  5. Brush a large baking dish with olive oil. Lay two sheets of phyllo dough flat, brushing each layer with olive oil.
  6. Spread the spinach filling along one edge of the phyllo, leaving a 2-inch border. Roll the phyllo into a tight tube and spiral it into the dish.
  7. Continue layering and coiling with remaining phyllo and filling, brushing each layer with olive oil.
  8. Brush the top of the assembled spiral with olive oil and bake in the preheated oven for 25–30 minutes until golden brown.
  9. Allow to cool for about 10 minutes before slicing and serving.
