- Preheat your oven to 400°F (200°C). Cut whole bulbs of garlic in half, drizzle with olive oil, wrap in aluminum foil, and roast for about 45 minutes until soft.
- Once cool, squeeze the garlic out into a bowl and mash into a fine paste.
- In a medium skillet, melt butter over medium-high heat. Add garlic paste, rosemary, thyme, red pepper flakes, salt, and pepper; stir for 2-3 minutes.
- Slowly whisk in heavy cream, adding about ¼ cup at a time and cooking for about 5 minutes until thickened.
- Gradually add Parmesan cheese, stirring until melted and smooth. Adjust seasoning as needed.
- Serve over pasta, chicken, or vegetables and enjoy!
