Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into uniform, bite-sized pieces.
  3. Drizzle olive oil over the diced sweet potatoes, add cumin, chili powder, salt, and pepper. Toss everything together.
  4. Spread the seasoned sweet potatoes evenly on a baking sheet and roast for 20-25 minutes.
  5. While sweet potatoes are roasting, warm the black beans in a saucepan over medium heat for about 5-7 minutes.
  6. Warm the corn tortillas either in a skillet or microwave until soft and pliable.
  7. Assemble your tacos by placing sweet potatoes and black beans in each tortilla, then add toppings.
  8. Serve warm and enjoy!
