For the Strawberry Filling
  • 2 cups Diced Strawberries Fresh or thawed frozen, drain excess moisture.

  • 2 tablespoons Pure Maple Syrup or Sweetener Adjust according to taste preference.

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan, or line it with parchment paper.
  2. In a large mixing bowl, combine 2 cups of oats, 1 cup of flour, 1 teaspoon of baking powder, a pinch of salt, and 1 teaspoon of ground cinnamon.
  3. Stir in 1/2 cup of sugar or preferred sweetener smoothly using a whisk.
  4. Add 1/2 cup of melted butter or oil to the dry mixture and mix until it resembles coarse crumbs.
  5. Press about two-thirds of the dough into the bottom of the prepared baking pan.
  6. Mix 2 cups of diced strawberries with 1 tablespoon of cornstarch and 2 tablespoons of pure maple syrup in a separate bowl.
  7. Spread the strawberry filling evenly over the pressed oat base.
  8. Crumble the remaining oat dough over the strawberry layer.
  9. Bake for about 45 minutes, until the top is lightly golden.
  10. Allow the bars to cool completely in the pan, then transfer to the refrigerator for at least an hour before slicing.
