- Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan, or line it with parchment paper.
- In a large mixing bowl, combine 2 cups of oats, 1 cup of flour, 1 teaspoon of baking powder, a pinch of salt, and 1 teaspoon of ground cinnamon.
- Stir in 1/2 cup of sugar or preferred sweetener smoothly using a whisk.
- Add 1/2 cup of melted butter or oil to the dry mixture and mix until it resembles coarse crumbs.
- Press about two-thirds of the dough into the bottom of the prepared baking pan.
- Mix 2 cups of diced strawberries with 1 tablespoon of cornstarch and 2 tablespoons of pure maple syrup in a separate bowl.
- Spread the strawberry filling evenly over the pressed oat base.
- Crumble the remaining oat dough over the strawberry layer.
- Bake for about 45 minutes, until the top is lightly golden.
- Allow the bars to cool completely in the pan, then transfer to the refrigerator for at least an hour before slicing.
