Step-by-Step Instructions for Peach Crumble Bars
- Preheat your oven to 350°F (175°C). Cream together unsalted butter and granulated sugar until light and fluffy. Gradually mix in all-purpose flour to form a crumbly dough. Press about two-thirds of this mixture into a lined 9x9 inch pan and par-bake for 12-15 minutes until golden.
- In a saucepan over medium heat, combine diced peaches with sugar and cornstarch. Cook for 5-7 minutes until the mixture simmers and thickens. Remove from heat and cool slightly.
- Spread the peach filling over the par-baked crust. In a bowl, combine the remaining shortbread mixture with rolled oats, then crumble this topping over the peach layer.
- Return to the oven and bake for an additional 25-30 minutes until the topping is golden brown. Remove and let cool completely in the pan.
- Warm the honey in the microwave until runny. Drizzle it over the cooled bars for added sweetness.
- After cooling for at least two hours, lift the bars out using the parchment paper and cut into squares for serving.
