Prepare Peach Filling
- Preheat your oven to 400°F (200°C). Toss sliced peaches with filling ingredients and roast for 20–25 minutes.
Make Streusel
- Combine flour, sugar, and cold butter until it resembles coarse crumbs. Bake for about 15 minutes at 350°F (175°C).
Prepare Crust
- Combine crushed graham crackers, sugar, and melted butter. Press into a springform pan and bake at 325°F (160°C) for 10 minutes.
Make Cheesecake Batter
- Beat cream cheese and sugar until smooth. Gradually whisk in remaining ingredients, adding eggs one at a time.
Layer and Bake
- Pour half of the cheesecake batter into the crust, layer with peaches and streusel, then add remaining batter. Bake at 325°F (160°C) for 55–60 minutes.
Chill and Top
- Cool to room temperature, then refrigerate for at least 4 hours. Garnish with roasted peaches and streusel before serving.
