Method
 

Prepare Peach Filling
  1. Preheat your oven to 400°F (200°C). Toss sliced peaches with filling ingredients and roast for 20–25 minutes.
Make Streusel
  1. Combine flour, sugar, and cold butter until it resembles coarse crumbs. Bake for about 15 minutes at 350°F (175°C).
Prepare Crust
  1. Combine crushed graham crackers, sugar, and melted butter. Press into a springform pan and bake at 325°F (160°C) for 10 minutes.
Make Cheesecake Batter
  1. Beat cream cheese and sugar until smooth. Gradually whisk in remaining ingredients, adding eggs one at a time.
Layer and Bake
  1. Pour half of the cheesecake batter into the crust, layer with peaches and streusel, then add remaining batter. Bake at 325°F (160°C) for 55–60 minutes.
Chill and Top
  1. Cool to room temperature, then refrigerate for at least 4 hours. Garnish with roasted peaches and streusel before serving.
