- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unroll the thawed puff pastry sheets on a floured surface. Spread 1½ tablespoons of Dijon mustard over each sheet.
- Lay thin slices of deli ham evenly across the mustard-covered pastry. Sprinkle grated cheese over the ham.
- Roll the pastry tightly from one edge to the other, sealing the seam gently.
- Slice the rolled pastry into 1-inch wide pinwheels and arrange them cut-side up on the baking sheet.
