  • 1/4 cup Ice Water adjust consistency of sauce
For the Garlic Sauce
  • 1/2 cup Additional Olive Oil for emulsifying
  • 2 cloves Extra Minced Garlic more for stronger flavor

Method
 

Step-by-Step Instructions for Chicken Shawarma Garlic Sauce
  1. In a medium bowl, combine full-fat Greek yogurt, olive oil, and fresh lemon juice. Whisk until smooth. Set aside half a cup for later.
  2. Add minced garlic and spices to the remaining marinade. Stir until well combined, then proceed to marinate the chicken.
  3. Pat chicken thighs dry, cut into pieces, and coat in spice marinade. Cover and refrigerate for at least 3 hours.
  4. In a food processor, add extra garlic and a pinch of salt. Pulse finely, then drizzle in olive oil and reserved lemon juice until creamy.
  5. Heat a skillet, add olive oil, and sear the marinated chicken for 6-8 minutes until golden brown and cooked through. Rest for 5 minutes.
  6. Slice chicken and serve with pita bread and garlic sauce, garnished with fresh herbs.
