Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream the cold unsalted butter, brown sugar, and granulated sugar until smooth and light in color.
  3. Add the large egg and vanilla extract to the butter-sugar mixture and mix until fully combined.
  4. Gradually sift in the all-purpose flour, baking soda, and salt; mix on low speed until just combined.
  5. Fold in the butterscotch chips, semi-sweet chocolate chips, and walnuts if using.
  6. Portion out the dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Press a few extra butterscotch and chocolate chips onto the tops of each cookie if desired.
  8. Bake the cookies for 10-13 minutes until lightly browned around the edges.
  9. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack.
