- In a large mixing bowl, cream the cold unsalted butter, brown sugar, and granulated sugar until smooth and light in color.
- Add the large egg and vanilla extract to the butter-sugar mixture and mix until fully combined.
- Gradually sift in the all-purpose flour, baking soda, and salt; mix on low speed until just combined.
- Fold in the butterscotch chips, semi-sweet chocolate chips, and walnuts if using.
