  • 8 ounces brie cheese cut into small pieces
For the Cranberry Filling
  • 2 cups fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1 cup panko breadcrumbs
  • 2 tablespoons butter melted
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, heat olive oil over medium heat and sauté the cranberries for about 5 minutes until they start to soften.
  3. Stir in honey, orange juice, cinnamon, ginger, salt, and pepper, and cook for an additional 3-5 minutes until the filling thickens.
  4. Remove from heat and let cool for about 10 minutes.
  5. Prepare chicken breasts by slicing horizontally to create a pocket for stuffing.
  6. Stuff the chicken pockets with brie cheese and cooled cranberry mixture, securing with toothpicks.
  7. Sear the chicken in a skillet with olive oil for 4-5 minutes on each side until golden brown.
  8. Mix melted butter with panko breadcrumbs and coat the seared chicken.
  9. Transfer to a baking dish and bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  10. Allow the chicken to rest for about 5 minutes, then sprinkle with chopped parsley before serving.
