Preparation Steps
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, heat olive oil over medium heat and sauté the cranberries for about 5 minutes until they start to soften.
- Stir in honey, orange juice, cinnamon, ginger, salt, and pepper, and cook for an additional 3-5 minutes until the filling thickens.

- Prepare chicken breasts by slicing horizontally to create a pocket for stuffing.
- Stuff the chicken pockets with brie cheese and cooled cranberry mixture, securing with toothpicks.
- Sear the chicken in a skillet with olive oil for 4-5 minutes on each side until golden brown.
- Mix melted butter with panko breadcrumbs and coat the seared chicken.
- Transfer to a baking dish and bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
