Step-by-Step Instructions
  1. In a mixing bowl, whisk together olive oil, honey, juice and zest from medium limes, minced garlic cloves, ground cumin, and a pinch of salt and black pepper.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag tightly and refrigerate for at least 30 minutes to 2 hours.
  3. Heat a grill or skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes per side until golden brown and cooked through.
  4. If rice isn't pre-cooked, prepare it according to package instructions while chicken rests.
  5. Using a round mold, layer cooked rice, diced avocado, sliced red onion, and sliced chicken.
  6. Top with chopped cilantro, drizzle remaining marinade, and serve with lime wedges.
