  • 3 tablespoons Honey or maple syrup for vegan

  • 1 tablespoon Sriracha adjust to taste
For the Base
  • 2 cups Cooked Brown Rice or quinoa/cauliflower rice
  • 1 medium Avocado or pumpkin/sunflower seeds
For the Salad Mix
  • 1 cup Cucumber diced, or radish
  • 1 tablespoon Olive Oil optional
  • 1/4 cup Cilantro or parsley/green onions
  • 2 tablespoons Lime Juice or lemon juice
For the Dressing
  • 1/2 cup Paprika Mayo Sauce or dairy-free mayo
  • 1 teaspoon Cumin optional

Cooking Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, toss the cubed skinless salmon filets with avocado oil, honey, soy sauce, and sriracha until well-coated.
  3. Spread the marinated salmon cubes on a baking sheet lined with parchment paper and roast for about 10 minutes.
  4. Switch your oven to broil and let the salmon crisp for an additional 2-3 minutes.
  5. In a small bowl, whisk together the mayo, smoked paprika, lime juice, and cumin for the sauce.
  6. Combine diced avocado, sliced cucumber, olive oil, chopped cilantro, and lime juice in another bowl.
  7. Assemble the bowls with cooked brown rice, roasted salmon, cucumber mixture, and drizzle with the paprika mayo sauce.
