- Combine the wet ingredients with the dry ingredients, stirring until just combined.
- Fold in the diced peaches gently, avoiding overmixing.
- In a small bowl, mix brown sugar, oats, and cinnamon for the streusel topping.
- Spoon the batter into muffin cups, filling each about 2/3 full, then sprinkle with the streusel.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Cool for 5 minutes in the tin before transferring to a wire rack.
