Cook the Soup
- In a large pot, heat a splash of oil over medium heat. Add the ground turkey and cook, breaking it up until browned, about 5-7 minutes.
- Stir in the black beans, corn, and chicken broth, combining everything and bringing to a gentle simmer for 2-3 minutes.
- Sprinkle in the taco seasoning, stirring well to coat the ingredients. Taste and adjust seasoning if desired.
- Lower the heat and mix in the cream cheese, stirring continuously until melted and incorporated, about 3-5 minutes.
- Allow the soup to simmer for another 5-10 minutes, stirring occasionally.
- Ladle the soup into bowls and garnish with sour cream and shredded cheese. Optional toppings include cilantro or green onions.
