  • 2 tablespoons Taco Seasoning Feel free to blend your own spices.
For Serving
  • 1 cup Sour Cream Greek yogurt works as a lighter alternative.
  • 1 cup Shredded Cheese Cheddar, Monterey Jack, or pepper jack recommended.

Cook the Soup
  1. In a large pot, heat a splash of oil over medium heat. Add the ground turkey and cook, breaking it up until browned, about 5-7 minutes.
  2. Stir in the black beans, corn, and chicken broth, combining everything and bringing to a gentle simmer for 2-3 minutes.
  3. Sprinkle in the taco seasoning, stirring well to coat the ingredients. Taste and adjust seasoning if desired.
  4. Lower the heat and mix in the cream cheese, stirring continuously until melted and incorporated, about 3-5 minutes.
  5. Allow the soup to simmer for another 5-10 minutes, stirring occasionally.
  6. Ladle the soup into bowls and garnish with sour cream and shredded cheese. Optional toppings include cilantro or green onions.
