- Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface and cut out approximately 24 circles with a 2-inch cutter.
- Create a small well in the center of each circle for the goat cheese filling.
- Fill each well with about 1 tablespoon of goat cheese.
- Bake in the oven for 8–10 minutes until the pastry is golden brown.
- Cool for a minute, then drizzle each bite with ½ teaspoon of honey and sprinkle with fresh thyme.
