Ingredients
  

Crust
  • 10 pieces Graham Crackers Can substitute with gluten-free crackers
  • 1/2 cup Melted Butter Coconut oil can be used for a dairy-free option
  • 1/4 cup Granulated Sugar Can use a sugar substitute for lower calories
Filling
  • 16 oz Full-Fat Cream Cheese Ensure softened at room temperature
  • 1/2 cup Sour Cream Greek yogurt can be used as a substitute
  • 1 tsp Vanilla Extract Use pure vanilla extract
  • 3 large Eggs Use room temperature eggs
  • 3/4 cup Granulated Sugar Can replace with a sugar alternative
Topping
  • 3 large Ripe Bananas Fresh bananas preferred
  • 1/4 cup Brown Sugar Coconut sugar can be used for deeper flavor
  • 2 tbsp Butter Use plant-based butter for dairy-free
Rum Glaze
  • 1/4 cup Dark Rum Can substitute with rum extract
  • 1/4 cup Brown Sugar Coconut sugar can be used here too
  • 1 tbsp Cornstarch Optional for thickening
  • 2 tbsp Butter Use plant-based butter for dairy-free

Method
 

Cheesecake Preparation
  1. Preheat your oven to 350°F (175°C). Crush the graham crackers into fine crumbs and mix with melted butter and sugar. Press into a springform pan and bake for 8 minutes. Cool completely.
  2. In a bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Fold in sour cream and vanilla. Pour over crust.
  3. Reduce oven to 325°F (160°C) and bake for 55-65 minutes until edges are set. Chill in the fridge for at least 4 hours.
  4. Slice bananas, melt butter in a skillet, add brown sugar, then banana slices. Cook for 3-5 minutes until caramelized.
  5. In a saucepan, mix butter and brown sugar, then add rum. Simmer until thickened, about 5 minutes. Optionally add cornstarch.
  6. Top cheesecake with caramelized bananas and drizzle with rum glaze before serving.

Notes
