Cheesecake Preparation
- Preheat your oven to 350°F (175°C). Crush the graham crackers into fine crumbs and mix with melted butter and sugar. Press into a springform pan and bake for 8 minutes. Cool completely.
- In a bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Fold in sour cream and vanilla. Pour over crust.
- Reduce oven to 325°F (160°C) and bake for 55-65 minutes until edges are set. Chill in the fridge for at least 4 hours.
- Slice bananas, melt butter in a skillet, add brown sugar, then banana slices. Cook for 3-5 minutes until caramelized.
- In a saucepan, mix butter and brown sugar, then add rum. Simmer until thickened, about 5 minutes. Optionally add cornstarch.
- Top cheesecake with caramelized bananas and drizzle with rum glaze before serving.
