Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season boneless chicken breasts with salt, pepper, and dried herbs.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
  4. Melt butter in the same skillet and sauté sliced mushrooms for about 5-7 minutes until tender.
  5. Add fresh spinach to the sautéed mushrooms and cook for an additional 2-3 minutes until wilted.
  6. Mix cream cheese, heavy cream, grated Parmesan, and chicken broth in a bowl until smooth. Season with salt and pepper.
  7. In a greased baking dish, layer seared chicken, followed by the mushroom and spinach mixture. Pour sauce over the top.
  8. Bake in the oven for 20-25 minutes until chicken reaches 165°F (74°C), finishing with a broil for 2-3 minutes if desired.
  9. Allow to cool for about 5 minutes before serving.
