Method
 

Preparation Steps
  1. Butterfly the chicken breasts to create even cutlets, approximately ¼ inch thick.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Set up the breading station with three shallow bowls for flour, whisked eggs, and breadcrumb mixture.
  4. Bread each chicken cutlet by dredging it in flour, dipping in eggs, and coating in the breadcrumb mixture.
  5. Arrange cutlets on the prepared baking sheet and bake for 15 minutes, then flip and bake for another 15 minutes.
  6. Add marinara sauce and mozzarella on top of the cutlets and broil for about 2 minutes until cheese is bubbly.
  7. Serve over pasta, zucchini noodles, or a fresh salad for a delicious meal.
