Step-by-Step Instructions

  2. In a food processor, pulse 10-11 Oreo cookies into fine crumbs and mix with 2 1/2 tablespoons of melted butter.
  3. Distribute the Oreo crust mixture evenly among the cupcake liners and press firmly.
  4. In a mixing bowl, beat together softened cream cheese and sugar until smooth and creamy.
  5. Add room temperature eggs and vanilla extract, mixing until well combined.
  6. Gradually mix in neon green food coloring until desired color is achieved.
  7. Spoon approximately 1/4 cup of cheesecake filling into each prepared crust.
