  1. Begin by washing the zucchini thoroughly, then slice it into even strips, about ¼ inch thick. Drizzle the zucchini slices with olive oil, seasoning them lightly with salt and pepper. Set the sliced zucchini aside as you preheat your grill.
  2. Preheat your grill or grill pan over medium-high heat. Once hot, place the zucchini strips on the grill and cook for about 3-4 minutes on each side. After grilling, remove the zucchini from the heat and allow it to cool slightly.
  3. In a medium bowl, combine Greek yogurt with your choice of chopped fresh herbs, along with a pinch of salt and pepper. Stir well to create a refreshing herbed yogurt sauce.
  4. Grab your tortillas and layer them with the grilled zucchini, drained chickpeas, and crumbled feta cheese. Drizzle herbed yogurt sauce over the filling before rolling the tortillas tightly into wraps.
