  • 1 medium Yellow Onion or shallots as a substitute
  • 3 cloves Garlic minced for best flavor
For the Sauce
  • 2 tsp Dijon Mustard or whole grain mustard for texture
  • 3/4 cup Sour Cream or plain full-fat Greek yogurt
  • 1/2 cup Beef Broth or vegetable broth for lighter option
  • 1 tbsp Olive Oil or vegetable oil as substitute
  • 1 tbsp Butter or margarine as needed
For Garnish
  • 2 tbsp Fresh Parsley chopped, optional but recommended
  • Salt & Pepper to taste

Step-by-Step Instructions
  1. Slice 1 lb of beef sirloin into thin strips and season generously with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the beef for 1-2 minutes until browned.
  3. In the same skillet, add another tablespoon of olive oil and 1 tablespoon of butter, then sauté 1 chopped yellow onion for 3 minutes.
  4. Add 3 minced garlic cloves and cook for 30 seconds.
  5. Stir in 8 oz of sliced cremini mushrooms and sauté for 5-6 minutes until golden brown.
  6. Deglaze with 1/2 cup of beef broth, then stir in 2 teaspoons of Dijon mustard and simmer for 2 minutes.
  7. Lower the heat and gently incorporate 3/4 cup of sour cream, then return the seared beef to the pan and heat through for 2-3 minutes.
  8. Adjust seasoning with salt and pepper, garnish with 2 tablespoons of chopped fresh parsley, and serve hot over egg noodles, mashed potatoes, or rice.
