- Slice 1 lb of beef sirloin into thin strips and season generously with salt and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the beef for 1-2 minutes until browned.
- In the same skillet, add another tablespoon of olive oil and 1 tablespoon of butter, then sauté 1 chopped yellow onion for 3 minutes.
- Add 3 minced garlic cloves and cook for 30 seconds.
- Stir in 8 oz of sliced cremini mushrooms and sauté for 5-6 minutes until golden brown.
- Deglaze with 1/2 cup of beef broth, then stir in 2 teaspoons of Dijon mustard and simmer for 2 minutes.
- Lower the heat and gently incorporate 3/4 cup of sour cream, then return the seared beef to the pan and heat through for 2-3 minutes.
- Adjust seasoning with salt and pepper, garnish with 2 tablespoons of chopped fresh parsley, and serve hot over egg noodles, mashed potatoes, or rice.
