- Trim the ends of the Brussels sprouts and remove any yellow outer leaves. Rinse them thoroughly and dry completely.
- In a large mixing bowl, combine Gochujang, olive oil, minced garlic, sumac, salt, pepper, and lemon juice. Whisk until smooth.
- Add the Brussels sprouts to the bowl and toss gently to coat.
- Line a baking sheet with parchment paper and spread the coated Brussels sprouts in a single layer.
- Roast in the oven for about 20-25 minutes, checking halfway and tossing for even cooking.
- Remove from the oven and drizzle additional lemon juice over the top before serving.
