  1. In a medium skillet over medium-low heat, melt 2 tablespoons of butter with 1 teaspoon of red pepper flakes for about 5 minutes until the butter is fully melted and aromatic.
  2. Take two thick slices of crusty white bread and spread a generous layer of the melted butter on one side of each slice.
  3. Place the skillet back on medium heat and add one slice of bread, buttered side down, to the pan.
  4. Top the slice of bread in the skillet with about 1/4 cup of crumbled goat cheese and 1/4 cup of shredded white cheddar, followed by 1 tablespoon of honey.
  5. Carefully place the second slice of bread on top, buttered side facing out, and press down lightly.
  6. Cover the skillet with a lid and cook for 5-7 minutes until the bread is golden brown and crispy, and the cheese has melted.
  7. Remove the sandwich from the skillet and drizzle a little more honey on top, sprinkling extra red pepper flakes if desired.
  8. Slice the sandwich diagonally and serve immediately, preferably alongside a bowl of tomato soup.
