- In a medium skillet over medium-low heat, melt 2 tablespoons of butter with 1 teaspoon of red pepper flakes for about 5 minutes until the butter is fully melted and aromatic.
- Take two thick slices of crusty white bread and spread a generous layer of the melted butter on one side of each slice.
- Place the skillet back on medium heat and add one slice of bread, buttered side down, to the pan.
- Top the slice of bread in the skillet with about 1/4 cup of crumbled goat cheese and 1/4 cup of shredded white cheddar, followed by 1 tablespoon of honey.
- Carefully place the second slice of bread on top, buttered side facing out, and press down lightly.
- Cover the skillet with a lid and cook for 5-7 minutes until the bread is golden brown and crispy, and the cheese has melted.
- Remove the sandwich from the skillet and drizzle a little more honey on top, sprinkling extra red pepper flakes if desired.
- Slice the sandwich diagonally and serve immediately, preferably alongside a bowl of tomato soup.
