Ingredients

For the Dough
  • 2 cups gluten-free flour blend Avoid blends with xanthan gum.
  • 1 tablespoon instant yeast If using active dry yeast, proof it first.
  • 1 teaspoon salt Opt for sea or kosher salt.
  • 1 cup warm water Ensure it's warm but not hot.
For the Filling
  • 1 pound ground pork or chicken Substitute with ground turkey or plant-based protein if desired.
  • 2 tablespoons low-sodium soy sauce Tamari is a gluten-free alternative.
  • 4 tablespoons green onions Chives can be used as a substitute.
  • 1 tablespoon fresh ginger Ground ginger is an acceptable alternative.
  • 1 tablespoon sesame oil Can be substituted with olive oil.

Equipment

  • Mixing Bowl
  • Steamer
  • Rolling Pin
  • parchment squares

Method

Prepare the Dough
  1. In a large mixing bowl, combine the gluten-free flour blend, instant yeast, and salt. Gradually add warm water while stirring until a sticky dough begins to form.
Knead the Dough
  1. Transfer the dough onto a floured surface and knead it for about 5 minutes until smooth and elastic.
Let the Dough Rise
  1. Place the kneaded dough into a greased bowl, cover it, and let it rise in a warm environment for about 1 hour.
Prepare the Filling
  1. In a separate bowl, combine the ground pork or chicken with low-sodium soy sauce, green onions, ginger, and sesame oil. Mix thoroughly.
Shape the Buns
  1. Once the dough has risen, gently deflate it and divide it into portions. Roll each piece into a smooth ball and flatten it into a 4-inch circle.
Fill and Seal the Buns
  1. Place about 1 tablespoon of the filling in the center of each circle. Pinch the edges together, sealing the filling securely.
Arrange for Steaming
  1. Prepare your steamer by lining the basket with parchment squares. Arrange filled buns on the parchment.
Steam the Buns
  1. Bring water to a gentle boil in your steamer and place the buns inside. Cover and steam for 15-20 minutes.
